Pork Belly Bites Appetizer - Spice/Recipe Suggestions

Having some people over this Friday. Going to toss a ham and a turkey into the Summit Kamado to smoke (or "double" smoke for the ham). I want to do an appetizer of pork belly bites. Anyone have a "go to" recipe (spice mix etc) you are confident in?
