That chicken brining thread got me down this rabbit hole. And who doesn’t like tacos?!?!?
Some pollo asado tacos made the usual way.
Marinated a few hours in the fridge, then hard seared and now finishing up on indirect.
Made a tomatillo, tomato, onion, garlic arbol salsa. Then added some fresh lime and cilantro.
Chicken BL skin on breast and thighs.
Next is the margs. I hope to post the rest of the pics
