Play by Play boston butt cook

Ok, since everyone helped me out so much with a couple of issues I had learning the new smoker, so I decided to do another bb.

Last night the 11 pm news said gusty northeast winds today. I did one cook in the wind and it was definitely a pain. So I hopped in my truck and ran to a 24 hour Wal-mart. I had already purchased an oil drip pan for the wsm to sit on but had an idea for a wind screen.

I needed 3 or 4, of course they only had 2. Got those and some duct tape and headed home.

I took the 2 I bought and the other one I had and scored the bottom of them then bent them about 4 inches from the bottom. This would give me a lip to weight them down and still be tall enough to cover the top of WSM as recommended on here. I layed them flat and used duct tape to make hinges. 3 strips each and I was set. Took about 20 min and cost 38 dollars, including the one I already had. Eventually I will replace the tape with hinges

Made my rub and got the smoker set up, but left it on the porch since it was supposed to drizzle all night. I also am doing an injection on this one so got it all set.

Set the alarm for 630 this am. Moved the smoker outside, lit the coals and got the butt prepped. Put it on at 7. Played with the vents for an hour. Currently at 11:20 it is holding temp..... more to follow. (yes I have too much time on my hands today)

Sorry, pic taken through screen. I put it close to the porch to block wind on the front since I couldnt get the other pan

ok, well I had some final product pics, but photo bucket is not working for some reason.

Pulled the butt off at 6 pm and let it sit for 30 minutes. Came out great. Ate my share and put the rest in the refrigerator.

Today I am going to make some pulled pork nachos for the football games.

No problems with temp control. It went WAY better

Here is the butt after I pulled it off

and here it is pulled after I ate some

As stated earlier I took the rest to work and made nachos with it but the guys at work messed them up (doh!). They were still good though....

Great looking PP Rick. Great improvise on the wind shielding. I'm going to keep that in mind if I ever need to do the same.

Cool. Glad you got that sorted out. FYI that stuff freezes really well. Put one meals worth in a zip-loc and when you're ready to eat it just nuke it in the microwave with some BBQ sauce on top and it'll absorb and everything will be moist and good.
