Plateau Level

I am still relatively new to the WSM and every time is an adventure. One thing I have noticed when I'm doing pork butt is that I don't seem to plateau at the 160-165 level but rather always seem to stall out around 180. At times, I think maybe I am running a little low on fuel but I don't have a corresponding drop in smoker temp. Anyone have any thoughts on this? FYI, I have calibrated my therms so I don't think that is the problem.

It's not that uncommon to stall again. Sometimes that's where the butt stays unless you increase temps.

I would probe for tenderness, as temp readings in a butt can be a little misleading if you are looking for an exact temp to finish at.
 
I wouldn't be concerned. I have a butt on right now that has stalled at 180....a little temp boost will take care of it......
