Hey Guys,

Does anyone know how many ribs you are fit in the WSM? Im planning to roll the ribs. This is the first time Im cooking for 30 people that want ribs. Thanks ahead for the help.
 
doing spares, you can comfortably get 3 rolled racks to a grate. So 6 in total. For hungry folks, that isn't going to be near enough for ribs for 30 people. If I'm cooking for people with big appetites and all they want are ribs, make sure you have 1/2 slab for each person.

You may be able to very carefully squeeze another 2 rolled racks - one per grate - fitting them all together sort of interlocked like a puzzle. But you need to make sure they aren't touching much, which would be a bit of work. And you still wouldn't get the amount you need for 30 people.

You'll find a few folks here that use multiple rib racks, piling them on the sides and tops and say it works well. You can get more on doing that method, I believe. I haven't tried it, though. Others here can comment on that.
