Pizza my way

Andrew, I do use lump. This is on my 26.75 kettle, a full chimney plus a small pile from previous cook banked against the back. Add stone when I add the coals. When temp gauge reads 600 I add several tennis ball size chunks of wood, helps kick it into overdrive. Put the pie on when it reads 700. Here are some pics of recent cook for your viewing pleasure. Thanks for the interest. One more thing, got these cheap forks at Walmart(1.00@) and bent tips which I use to rotate pie 1/4 to 1/2 turn every 2 min. during 10 minute or so cook.

looks very good!

What are you using for your dough here? It almost look like its precooked or something? I think the 26" would help - you can have a hot fire and back a little further.......

Wow that looks great. I hope I can do something remotely close that when I give it a try....

That looks pretty darn good Troy! I will try a full chimney of lump next time and add some to the fire once I pour them out of the chimney. Maybe that's where I am going wrong. Seems like your setup at the back is also a good option. I have tried in the baskets on the side and last weekend I tried a ring of coals leaving the middle clear. Still was not that great. I did use Briquettes though so maybe the trick is really to use lump with your setup at the back of the grill!?! By the way, did you make that dough or buy it pre-made. It looks like it was cooked already and then you added the toppings to it.

Thanks for sharing Troy!
