Ron, great point about cheese. The quality of the cheese makes such a difference. The mozzarella from an Italian market, Pasta Provisions, is light years ahead of the basic retail stuff. Two or three cheeses can add interesting layers of flavor.
However, a good crust with just two or three quality toppings can be magical.
