I kinda already had it in the back of my mind that tonight was going to be pizza night (knew I was going to be solo), but Tim's post yesterday sealed the deal! Only had pepperoni and a portabella mushroom rolling around in the fridge, but that was enough. I'm working on a version of the Vera Pizza Napoletana "authentic" dough. Same day, room temp ferment, needs work (on my end, I think the folks at VPN have it down!)
Probably need to dial back the yeast or the temp (or both). Don't get me wrong, it was tasty, just needs a little work!
