Vic, looks great. I'm fairly new to smokers, but was eying that tri tip. It seems at my local Costco they offered "Beef Loin tri tip whole peeled". Any clue what "peeled" means?

If I understand correctly, it's the same as the tri tip steaks you'd grill, only purchased as a whole, then you'd smoke it. Is it night and day difference from grilling? Do you prefer smoking chunks of meat like this as opposed to grilling individual steaks?
 
I think that tri-tip that you saw was probably the same. When I do my tri-tips I do it one of two ways depending if I want to use a mop or not. If I use a mop I'll sear it first than put it in the WSM and mop it every 15 min till it gets to 130. If I don't mop I'll smoke it first till it gets to 110 than pull it and sear it. I personally like it smoked better than grilled.

me too.

nice shooting Vic! I take my food pics seriously, besides its not hard to make your food look good. I have a tiny tripod that I started using since I read to avoid using the flash when shooting food. It sure helps get a tight composition without the blur. Also I try to shoot in natural light, you'll get better contrast.

got to love those glossy ribs.
 
Looks great! I love tri-tip. I grill mine, real high heat. I do them on the kettle usually. Pretty sure that is my favorite piece of beef right now. Great job on the pics, ribs especially!

That's some mighty tasty Q there!

I'm really curious about Tri's, I've only heard of them since coming to this site as they are not a popular cut in my neck of the woods.

Pics like yours make me want to go for it and get a special cut from the local butcher!
