I'm considering "catering" my own party in a few months. We expect 50 of 80 people to come (including plus-ones.) I have an old 18" WSM and my buddy has a BGE (not sure of the size.)
Ideally I would smoke something(s) for reheating and something to come off around dinner time.
I've had success with pulled Boston butt and I know it will reheat well. I've had great success with pork back ribs, but I'm not so sure how well they will store and reheat. I've had moderate success with beef brisket (always comes out a bit dry for me.)
Any recommendations?
