Ground 50/50% beef/pork mixed. + spices/beef fond/egg

This is were things go a bit wrong(picture wise) Ok let me explaine. Feta cheese is lenght wise to make a "log" wrapped in american cheese-->Wraped with the ground meat mix.-->Wrapped in Phyllo paste!? Got it?! (and oh some chili flakes ontop) This dough needs to be brushed with oil just to be "workable" its paperthin.

Baked indirect @ 375-400f. Time around 30 min.

Actually a really neat one. Really crispy on the outside. After a splash of sriracha and the plate was completed. Emilie is one heck of a pastry chef.(a trained one) And she have made those thin butterdoughs to perfection. But she said phyllo paste is almost undoable in a normal kitchen. So this is bought.

I would do a copy and paste but then I would be coping the whole tread with the word outstanding. What a great team.

Are u a professional chef? Your food looks amazing. I believe I've seen your cooks before on the Primo forum if I'm not mistaken. If you don't mind me asking what type of camera are using for your pictures? Excellent post
 
I cook some with puff pastry, love the way it makes a great dish. However, I've yet to do one on the grill though I sometimes will sear the meat on the grill first, like with beef wellington.......I'm going to try that cook you've posted......looks quite good.

And a question for 'ya. I'm planning a Baltic cruise next year, so what do the temps look like in May to June...................d

David: May-june is green/vibrant,and prolly my favorite month´s. Maby couse we got rid of the dark/cold. Temp is prolly T-shirt worthy. But then again hwo knows. Just give me a head´s up...And i light the grill! :cool:
