Photos of my catering set-up

nice pics, dave!

now, 4 ricks, 4 fenders, etc. are you talking about basses or guitars? both? i assume basses because you have a warwick in there!

Nice rig! Sure helps with a party that big. I cater a lot using just my 3 wsm's a couple kettles and a small offset and it a pain managing all that food. Ive got to get me a big rig like yours!!!

Sweet! Just curious; How long does it take from loading it up to getting it to temp.? And, How much wood do you use to get something like that up to temp.?

Keith, I'd say 1.5-2 hours until it is fully heated. It will take about 6 -4 x4 x 16" splits to get her going but, I have a 60,000 btu burner in the firebox on the side to "help out!" I'll go through 2-3 pieces per hour for the duration.

That's a beautiful rig you have there Dave. Who built it for you?

She is a Klose, custom built four years ago now! </div></BLOCKQUOTE>

I was wondering. I have never seen or heard any negatives about Klose or his rigs.

I can only find ONE negative on this pit after cooking 4 seasons on her. They use screws to hold down the stainless on the shelf in front of the doors. I would think there would be some type of adhesive. Other than that, Dave is a great guy, (but so is Ritchie Robin at Gator pits) and both make great pits. I am totally satisfied with my pit.

Nice setup Dave. Here I was trying to convince my wife about the 22.5 smokey mnt. Then I see your rig and now am researching either an American BBQ Solutions Pit Boss or Judge or a Horizon Smoker. Your web site is top notch too.

I also had the Klose guys send a DVD of their rigs.

I am a teacher who has time in the summer to some catering type jobs and it is intriguing.

Greg, take a look at Gator Pit as well. He is a better priced alternative to Klose, but with all the features. Ritchie is a personal friend. I almost bought a Gator, but the Klose rep kinda hooked me! Where are you? This stuff sells up here in the Midwest, but it may be harder for you if you are in the South! Dave

Dave,

We live in Colorado. Just did a smoke where we did pulled pork, brisket, homemade sauce, and homemade bbq beans. It was awesome. It is like the bat signal. One e-mail and we rally the whole family for BBQ.

Dropped some off for the neighbors and they went nuts.

Thanks for the link. I have had a kick looking up all these great smokers. Of course with the economy like it is a sweet smoker is more want than need.
