I always us the minion method with water in the pan for spares. I prep the ribs early, and put me back in the fridge. Then I put em on cold at 225 for 5-8 hours using kingsford " Still learning lump". They always turn out great. The thick smoke ring is what I am going for.
 
I'm liking the look of those potatoes as well. It looks like an interesting variation. I will have to try something like that soon.
