Anyone out there ever smoked pheasant? It is my father-in-laws 80th birthday and he has requested pheasant. I am the designated cook. Is it any good smoked or should I stick with roasted? Also, any particular wood recommendations?
 
I smoked a few pheasants a couple of years ago. I was not impressed (of course, I'm not one for smoked chicken either). IMHO, roasting would be the way to go...and don't forget the bacon on top to keep it moist!
