Pheasant on the WSM

A buddy of mine just brought over some frozen pheasant that he'd like me to smoke on my WSM. I've never tried this before, and am worried that it may be too lean/delicate for the WSM (I don't want it to dry out on me).

He suggested doing a bacon wrap to prevent them from drying. I was thinking that brining them may help as well. Has anybody had any experience with pheasant? Any tips are appreciated.

Yes, the best way to keep it moist would be to brine. A bacon wrap will not help in this area.
 
Milwaukee, try this procedure... done this once with GREAT results... i used pecan wood for smoke.
I have some if you'd like.

me being hunter I would say that thumbs up for your recipe even I have not tried it. I would try it my self, but fox cleaned my pheasants. Wagner: Have a try and report!
 
Just did 3 pheasants last fall, they turned out great. . Don't worry about drying out, just brine, smoke around 325, and take off the smoker at 160.
 
Thanks for all the advice. I'll be sure to use pecan, Jim, it's one of my favorites to use for just about anything. If, or I should say, when I run out, I'll be sure to drop you a line! ;)
