First time smoke using pecan and apple wood. Did a low and slow chicken this past weekend. Wonderful flavor. Not anything like hickory/oak/mesquite used in the past. Now I want to try some pork loins with the pecan/apple. Glad I ordered this wood...opens new way of smoking. BTW, with the WSM I could peg the temp anywhere I wanted it. </div></BLOCKQUOTE>
Its hard to get pecan up here, but I use apple with pork loins all the time and I find that it is such a great addition to the pork. Because the loins don't take much time to cook, the apple smoke gets allot of flavour into the meat quickly. I can only imagine how much better it would taste with a bit of pecan added into the mix!
