Pecan and Apple Wood Smoked Chicken

First time smoke using pecan and apple wood. Did a low and slow chicken this past weekend. Wonderful flavor. Not anything like hickory/oak/mesquite used in the past. Now I want to try some pork loins with the pecan/apple. Glad I ordered this wood...opens new way of smoking. BTW, with the WSM I could peg the temp anywhere I wanted it.

Its hard to get pecan up here, but I use apple with pork loins all the time and I find that it is such a great addition to the pork. Because the loins don't take much time to cook, the apple smoke gets allot of flavour into the meat quickly. I can only imagine how much better it would taste with a bit of pecan added into the mix!

Stuart, I get pecan (chunks) at Home Hardware all the time. I think it's $9.99 for a 360 cu inch bag of Weber Chunks (or $4.99 for a lesser bag of chips). Pricey for what you get but at least I can get it.

Their shelves are getting kind of bare what with our summer almost over. Even the ML briquettes at Can Tire are down to their last 30 bags or so.

I was just at the one near my house getting some Maple Leaf Briqs to use in the WSM tonight and they didn't have any chunks of any brand...just chips. Must be a regional thing, I'll have to look and see if I can order some to my local store.
