Pastrami ?

Going to do my first pastrami. I had to pick the flat up tonight so I could get a good sized one. Will it be ok to start the dry cure tonight? I can't cook it until Saturday. The other question is wood choice. I 'm doing the recipe Chris posted on the home page. It calls for pecan. All I have is Apple, Peach and Cherry any sugestions??

Ahhh!! Pastrami.... I just cooked up two flats last weekend.

If you start curing tonight, you could rinse and soak on Friday night, then leave in the fridge until your ready to cook on Saturday. I usually shoot for a 3.5 to 4 day cure.

Now, I don't think there would be any problem waiting until Saturday to rinse and soak. But I might be inclined to take care of it Friday night.

Length of time in the cure is dependent on the thickness of the flat. I try a get the thickest/uniform flat I can find for pastrami. I go a min of 5 days, and up to 7 if it's pretty thick. I would use cherry for it. Good luck and let us know how it turns out.
