Panda Express copycat eggplant tofu

One of our favorite vegetarian recipes. Heat, sweet and tasty.

I buy fried tofu from the Asian market. I don’t like to deep fry at home indoors.

The rest is pretty simple and it comes together really quickly.

To cheat the eggplant with flavor and get it to wilt quickly, I hit it with salt and Chinese black vinegar for 10 minutes before stir frying it.

Any Asian market should have that in the refrigerated section. It’s fried and vacuum sealed. Some come seasoned. I prefer plain as my sauce will season it.
