Panda Express copycat eggplant tofu

One of our favorite vegetarian recipes. Heat, sweet and tasty.

I buy fried tofu from the Asian market. I don’t like to deep fry at home indoors.

The rest is pretty simple and it comes together really quickly.

To cheat the eggplant with flavor and get it to wilt quickly, I hit it with salt and Chinese black vinegar for 10 minutes before stir frying it.

While it looks excellent, I personally have issues with tofu, the texture being a major issue.

Any Asian market should have that in the refrigerated section. It’s fried and vacuum sealed. Some come seasoned. I prefer plain as my sauce will season it.

Fried tofu is kinda dense. Good texture and it takes on whatever flavors you put with it.

This dish had a lot of ginger, fresh garlic and chilis. The sauce was savory and sweet with a slight heat note.
