Here's the deal. With CAB flats going for $4.99 around me, I'm thinking of an alternative. At work I can get a case of select packers with four 8# avg pieces per case. Cases are running between 30-40 pounds. Price is $1.97 a pound. The one drawback is. I can't open the case to see what I'm getting. So I have a question for those who by packers. On the average how much fat waste do you get per packer? I'm wondering if it would all just even out price wise, between the extra waste and the grades in meat.
 
I figure 40-50% yield. But I like fat. I don't feel that the loss of fat is a "waste" as it is helping in the cooking and flavor process.

I know, I have some issues...lol.

I've only done flats, and trim down to about 1/4".
 
I've cooked both & a lot depends on the price & time I have. A packer @ $2 a lb & trimmed flat @ $4 / lb are comparable ( the time & trouble are worth something!)

Those are quite small for actual packers. Possible (I just did an 8.6-pound one) but not usual. I'd want to be sure that they were in fact intact packers. (I've seen quite a few of ~ that weight that, though the label says 'packer' are not whole; they've been trimmed, often from both ends).

I don't trim either.

One thing to note, CAB is a significantly better grade than Select, being that it is the upper third or so of Choice.
