Oxtail & Lamb Kidneys Stew In Dutch Oven Using Hot Coals

First time trying cooking in a Dutch Oven by this method, 4 hours in 2nd set of coals, give it another hour and then sort the gravy out from the liquid and add some mash, the meat is not far off and the smell is just divine when the lid is lifted

Thanks, just finished it off, one of the best meals I've had in ages, fall off the bone meat. The juice once sieved to remove fat and cornflour added to thicken, was next level gravy and mopped up with crusty bread. Can honestly say I'm stuffed after that

What are the black stones atop the red bricks?

They're called Blue Bricks over here and used mainly in the Construction & Foundation of older homes https://reclaimedbrickcompany.co.uk/collections/new-blue-bricks?

My house over a 120 years ago was built on an old Brick factory and you only have to go a spades depth down in places to start hitting old bricks of various types under the ground still from the old factory. When we moved in there was an 4ft old garden wall, 150ft long built on both sides and a 10 ft high one at the bottom, with these and red bricks and although knocked the side walls down to replace with fencing many years ago, kept some of the more decorative blue bricks from it for things like this

We do something similar with a “potjie” pot which comes in a few sizes. Lamb, chicken, and oxtail potjiekos are pretty popular in this house!
It’s a South African thing, but I think every culture/ country has its own take on the same process.

I only like lamb Kidneys, wasn't sure they'd go with beef oxtail, but thought they did for my tastes anyway. I coated them in the same flour and seasoning mixture i covered the oxtails in before frying the oxtails off first and they stayed juicy even with a 5 hour cook
