Overnite Cook

Hi,
My question is this;
I'm doing my 1st brisket and was wondering if this would be a good choice for a overnite cook?
I'll be cooking a small flat on the WSM adding spare ribs later in the cook.
Thanks,
Tom.

Small flat? No, not really a good choice for an overnighter, imo. Go for a packer or, for your first overnighter, perhaps a couple or three butts.

Tom, gonna echo Kevin here. An overnight cook is a lot of work, may as well get a lot of leftovers out of it.

From a more practical pov though, the small flat won't be on the smoker long enough to justify an overnight gala. Go ahead and get a full brisket or two, or butts, or ribs. Something to really make it worth your while.
