I am wondering how big of a difference it makes on a Butt or any piece of pork to Rub or marinate then throw into fridge or cooler overnight or for 24hrs.

I love to marinade thinner cuts such as chops or tenderloin. Salad dressings work exceptionally well for that too, for a Butt just rub it and/or inject it. A marinade alone will not penetrate it.
