Over Night Butts

It had been some time since I did an overnight cook....as well as my supply of PP was dwindling. Used this rub on a couple of 8lbers.

I'd forgotton just how easy these are...full ring of lump, apple and hickory after 90 minutes temp stable at 240ish....11 hours later wonderful pulled pork.
 
With Summer ending in 3 or 4 weeks (literally here), I need to do another butt cook to stock up for Winter. PP looks great! Got any sammie pics?

Hey Bill, what do you mean "stock up for the winter"? There is nothing like tending 3 or 4 butts as the snow flies! Not that I'm in any hurry to do so....
 
Mais, I'm a fair weather smoker. LOL The winds are pretty bad here from Fall to Spring and you have to pick your cook/smoke days carefully .. Sometimes, I just don't get any good days

Just threw an 8lber on an hour ago. Something peaceful about the overnight cook. Plus, there have been optimal wind conditions in CT 2 of the past 3 weekends. Looking forward to an excellent Sunday dinner.
 
Nice job on the butt. Pulled pork is probably my favorite. There is something about getting it up to temp, that crusty bark, and the beautiful way it shreds so nicely. Gotta go pull some out of the freezer.
 
i've got a couple of 8lbers to go for tomorrow.

hope we don't get those thunderstorms, as my wsm isn't under anything.
 
They sure are pretty. That pork looks great. I used this rub myself last weekend on two 7lb butts. Very nice!
