Inspired by my friends Jim and Jeff , I picked up a 3.5 lb fresh chicken at Goffle Road Poultry on Saturday, spatchcocked and marinated overnight in the jerk marinade using 2 fresh habenaros. Really delicious and full of flavor. I didn’t feel the need to use a finishing sauce, just grilled indirectly on the OTG with one chunk of cherry wood.
Sides: fried plátanos, mango salsa, grilled asparagus, long-grain jasmine rice, okra with ginger, garlic, shallot, chili and a dash of curry powder.
