My wife makes this as a side dish, I don't know where she got the recipe, but it is pretty good. I'll edit and add a photo in a minute.
orzo pasta
bag sweet mini peppers cut up
oninon cut up
can mushrooms drained
can diced tomatoes drained
can of corn drained
some minced garlic
cook pasta/drain
sautee onion, peppers, garlic.
add mushrooms and corn to heat up.
mix pasta and everything else together and salt pepper to taste.
