Daughter is bringing THE boyfrind over for the first time and the advertised menu is spares.
There I am, cleaning/setting up the WSM and I manage to separate the Guru's pit probe from the wire. (#@*!%**!!!) Oh, well, back to the old ways of doing things.
Started the fire, (Minion w/ 1 chimney, 2 chunks of pecan) one vent 100%, (down wind vent, pretty windy, and my WSM is not one of the tighter ones) and stabilized it at 220, with one vent at 10%. Excellent!
Ran my version of the 3-2-1, a 5-1-1. I pushed the temp up to 230-240 to finish.
After all these years of trying, the ribs were cooked perfectly, clean bones, not falling off of the bone.
I am going to have to try this again!
