What are the differences between the two models. Is either one superior? I plan on using one of these models on a concession trailer, would either one be be preferred for mobile catering?
I don't have experience smoking a lot on those pits - but from what I understand, they perform nearly identical. however, I've heard that ole hickory pits use parts that are much more easily replaced than southern prides (belts, etc.). you can get your parts from Grainger and other places when something breaks on a hickory pit. but with southern pride, you need a southern pride part to replace it, which can set you in a real bind and put you back a few days until you get it.
