Mrs Dollar and I visited Ray's BBQ at noon today. Its owned by Darrol Ray, who played DB for the Univ Oklahoma Sooners in the late 70's and then went on to play for the New York Jets. This is Ray's second location, he started with a joint in Norman. The menu has a variety of sandwiches along with burger options, its not just barbecue.
Ya hear often that if the barbecue needs sauce , then something went wrong smoking the barbecue. But Ray's is the case of it not being bad barbecue, but it needed sauce.
We both got the 2 meal plates, Mrs Dollar getting the pulled pork and brisket, while I got ribs and turkey.
Best thing I tasted was the turkey, it was moist with good smoke flavor.
The pulled pork was bland, it really did need sauce.
The ribs could've used more smoke and rub, and they were most definitely fall off the bone, but just non descript in flavor.
The brisket was extremely thin sliced, dry, and not even warm. By the end of our meal, it was cold. Even though thin sliced, it still did not pass the " drape " test, though it fell apart easy enough. It should have, as thinly as it was sliced.
The two sauces were both great. One was very similar to Head Country, or a mild KC style sauce, sweet and a little bit of tang. I thought the other was similar but had a bit of heat on the finish. Ray's BBQ is a popular place, and I'm sure its the sauces that keep people coming back.
We got the usual sides, the beans were Ranch Style with some brisket and maybe some cayenne for some heat. The cole slaw, mac and cheese, and okra were average.
Ray's checked all the boxes for the casual barbecue guy, the guy in the Yelp reviews who only rates the joint based on the sauce, or would only order a sandwich, or expects his ribs to be fall off the bone. Which is not a bad thing.
Rays is located in a strip shopping center and I found some smoke wood stacked in the back and the smoker had to be inside. Its most likely a gas assist smoker. And I could tell that in the flavor of the meat or the pit guy was stingy with the wood. The smoke flavor I'm used to, was just not there even though the meat had a good smoke ring. But some may like that.
