I am off to the butcher to pick up a *fresh* boston butt. It will be my first time doing a fresh boston butt instead of that enhanced crap ya get from wally world. Anyway, I was thinking of marinading the butt overnight in apple juice. Has anyone ever done this?? Will my pork maybe be too sweet as a result?? Should I just inject and not let the butt sit in applejuice?? Maybe throw a lil' Jack in the juice?? Thanks.

How can you tell that a butt has been "enhanced". Does it say so on the packaging? I joined one of the warehouses specifically to get BBQ meat, as the butcher's prices were about $.50 to $1.00 per lb higher.

I would go the injection route. You will get a better flavor throughout the butt vs. marinating. You can also mix some of your rub in with the AJ before injecting as long as it is fine enough to get through the needle. I have injected several times and have been quite pleased with the results. Sure why not put a bit of Jack in it!

Yes the package with say, "enhance with a solution" on the package. You can also tell by looking for the nutrional facts on the wrapper of the meat, if it has one something has been added to the meat. Fresh meat does not have the nutrional facts label on them. I have never seen enhanced butts/picnics in the warehouse stores. I have seen them in WalMart and some grocery stores.
 
Al, I have only used fresh butts from the butcher and they are AWESOME!!! I would inject it rather than letting it bathe in the juice. I don't inject my butts but if I had to choose between marination and injection....I would inject for sure!!!
