oh boy advise needed

So next saturday I'm throwing a 30th bday party for the wife. Going to have 40-50 people over, plenty of food and drinks that's for sure. I will be doing all the cooking. Thanx to a friend I'll be hitting restaurant depot to pick up all the food. What I need the advise with is I made the mistake of asking every "Hey let me know what you want me to smoke"....I have gotten the following requests:

Pork Butt
Pork Ribs
Beef Ribs
Brisket
Sausage
Chicken

I have one 22.5 WSM, a few 22.5 one touch and a couple cheap charcoal grills I have acquired through the years just because they were cheap and needed in a pinch. I can't smoke it all! Or can I???


I'm thinking of dropping the chicken (thighs were requested) and as much as I love beef ribs and brisket, I'm thinking of dropping those too. I think I can get the pork butt, pork ribs and sausage done. I don't want to make to little of something...I don't want to disappoint anyone by not having enough food you know.

Advise?
 
Wow, sounds like my last sunday, lol. I did 2x brisket, 8 racks of ribs on my smoker, then did chicken wing apps on the charcoal grill with no problem. I only needed the gasser for the lamb.

You could do, 2x butt's over night and toss the ribs on when the butts come off with out any issues, just keep the fire going. I did a huge batch of smoked beans under the 8 racks as well.

I'd drop the beef ribs. If you can do a HH Brisket in one of the kettles that could be a go, but it's a lot of extra work and food, lol.

I'd do
2x Pork Butt
8x rack of ribs
Smoked beans
Appy of chicken and sausage on the kettle.
Plus what other sides you want.

That should be enough food. I have tons left after my last big cook.
 
Me, I'd do a room-temp or chilled smoked salmon app along with a couple others (probably a chilled soup), 3 or 4 butts for the main (with a selection of sauces. Savory beans (not smoked), possibly a slaw, two or three additional sides.

But I never ask what people want, even those that pay me to cook for them.

I agree with Kevin. I will ask about any particular allergies, but I select the menu.

yeah I don't know what possessed me to ask. normally I just say what I'm cooking although there are times that when I have a few people over I tell them if they bring it I'll smoke it. But, didn't really think this time lol.
