Just a couple of chicken breasts and some country style ribs. All were brined overnight.

I dusted the chicken with some Weber Roasted Garlic & Herb. The pork got some Rib Rack Sugar Free BBQ Rub.

Love the Slow 'n Sear. Cooked them up to about 150º indirect. Then everybody took a turn over the coals for a nice finish.
 
I’ve got to get on the slow and sear train! The thing is still unused since my birthday back in August! I’m hanging my head in shame!
I know that a lot of folks here will just say that you can bank the charcoal or use the little Weber baskets, and I'm sure that you can. But I will tell from personal experience, the SnS will change your game. Having that little water trough make a difference on the low and slow cooks. It also help moderate temps and help slow your charcoal usage.
