NOW what do I do? I NEED HELP!


 
I am cracking up reading this thread! Ours was a Christmas present too. I had it shipped to a friend's house so that my husband wouldn't see it. Needless to say, I was so excited last week when it arrived, that I had to tell him, and I made him stop and pick it up on the way home from work last Friday.
We did our first smoke on Saturday. Wow! All I have to say is DON'T WAIT. This time of year is perfect for smoking (probably every time of year is perfect). You can make some wonderful treat to share at your Thanksgiving celebration!
I had planned to try to wait until Christmas too, but after reading some of the ideas and suggestions on the boards, I plan to make some things, like smoked nuts, for little gifts for my friends and family. I have a nephew (age 23), we have little in common, except he likes to eat and I like to cook. For the past few years (about 8 yrs. now), I go and buy two big steaks and make beef jerky for him. He loves it! What else do you get a teenage boy with a big appetite? Meat! This year I suspect his present may have a distinctly smokey flavor...
Good luck with your patience, Silas, you will be happy with your smoker whether you decide to wait until Christmas or get cookin' right away!

The box is big. It's sitting there, mocking me.

It has been opened and checked over - it's all good! And mocking me.

But I'm getting everything together for the first smoke on Boxing Day...(Christmas Day itself won't work - I'll be out all day, and I want to be around for the first smoke!)

I am going to have all of the meat ready - rubbed, brined, trimmed, or whatever, a big bag of K, some wood chips, everything all ready...

Still waiting, VERY excited...

Well, I personally think all this is preposterous! Take a close look at this

and then go do that with your new WSM (I'm sure you didn't check it out properly as demonstrated there). Then do it right -- SMOKE SOMETHING! THEN

Frankly, Silas, you are seriously jeopardizing the happiness of your family at Christmas. We all know nothing works properly the first time. Unless your WSM is broken in, you can't make a wonderful meal for Christmas (or Christmas Eve as the case may be). Boxing Day my a... Be fair to you wife. Practice makes perfect. Remind her of how much better a lover you are now than you were when you first got together. Practice, practice, practice. Get a good layer of smoke and grease in that thing so the important meal will be done right.

Then be patient.

Simple - something has to happen to your "main" cooking equipment. AKA the kitchen stove needs to suddenly go out of commission, lots of ways to do that. At least long enough for the new WSM to "save the day" by arriving just in time to cook a few dinnners until the kitchen range is repaired

I'd expand on John Ford's idea. Buy her a nice big diamond ring for Christmas, show it to her, but tell her she can't wear it until AFTER Christmas. Then put it under the tree with the box open.

I bet you'll have that smoker fired up in a day or two.
