I have a slightly out of round middle section and a leaky access door. If I turn the door upside down and use a foil gasket between the charcoal bowl and the middle section, I get a very good seal and can run at lower temps all night long with the terra cotta saucer and no water. With no gasket and door right side up, my cooker gravitates to about 300.
