no sauce ribs question

I made bb's Saturday and they came out great. Today, on the other hand, only the ones I put sauce on after smoking and foiled for 45 minutes did. The main difference between the two smokes was that I filled the water pan Saturday but not today. Any suggestions other than using water? I hate the mess it makes so I'd like to avoid it if I can. Thanks.
 
Are you saying that the ribs you made on Saturday you did not put sauce on - and some of the ribs you made today you did not sauce and did not foil and that those ribs were not as good? - and that some of the ribs you did today you did sauce and did foil and they were good?

I'm missing something. How did you do your ribs (sauce? foil?) on Saturday?
 
I have to say, I don't use water in the water pan on any of my cooks, haven't for over 6 years now. Also I prefer my ribs without sauce, and never foil them. So I'm interrested on some more info on your process from the two cooks, as asked above. What didn't you like about them? Were they dry, lacked flavor, and what rub did you use for the cooks, same one or different, and what wood was used? Need lots more info here to help you out.
 
The problem was the the ones without sauce and foiled after the cook today were a little dry. Same temps with lid temps a little under 250. Same rub. Foiled half with and half without after for about 45 minutes. Same wood (apple ). The only difference was that I used water Saturday and not today. The sauce after in foil made half of them come out really well today but I prefer the no sauce. So, would you go with a lower temp to keep the rub only ribs moist or just stick with filling the water pan or something else?

Dry as in chewy dry? -easy to get off the bone but stringy dry?

You foiled only after removing from the cooker, right?

Water won't make a difference nor will lowering the temp (I cook mine 100? hotter). The key is not to remove them till they are moist and tender. You can foil if you want, for resting, but they need only 5-10 min rest. (Longer won't hurt though.)
 
Yes. Your results indicates they were overcooked. Check sooner. When a probe inserted between the bones goes in effortlessly they are tender.
