No pasta pesto chicken with peach!

Had big plans for a dinner party tonight but it got cancelled. Ended up just doing chicken thighs over some spinach with pesto.Just did a quick flash on spinach topped with chicken, pesto and some cheese. Very simple! Used peach for smoke for the first time with chicken…incredible!

I think both of those pictures and the final dish look amazing. I love straight peach wood on chicken. I make a good bit of simple grilled chicken for wraps, salads, and dinners with rice and a veggie. I have turned to setting my kettle up just like you did here with a small piece of peach wood in each basket. When the chicken is done, I can actually see the color change to the surface of the chicken due to the peach wood. Pork I like to mix the peach with pecan, but chicken is peach only!
