no pan

anyone use wsm without waterpan to cook chicken on. Kinda like direct but with coal lower then on kettle. If so how does it turn out?
 
I do it that way every time.

Corey ur chicken will turn out great, i cook 95% of the time with out the pan at all, the only time i use the pan is when i cook brisket. I cook my chickens at 325 for about 1.5-2 hrs max depends on the weight of ur bird. I am talking about beer can chicken. When i cook chicken pieces i put the charcoal grate where the water pan sits. Hope this helps and gl bud.
 
Yep, do chicken thighs like that all the time.

When I do pulled chicken for the church picnic, I use both grates with no pan.

Bottom vents wide open. Never check temps when cooking chicken, just check for doneness.
Smell reminds me of the State Fair, but the smoke draws every fly in the county.
 
how much charcoal are you guys using when you do it like this? I assume you are not using mm like this and just lighting all coals in chimney right? are flare ups ever a problem? usually when i cook direct i have a nondirect ( safety zone ) side as well
 
That's actually my favorite type of smoked chicken, directly over the coals. You cut the capacity of the cooker and might want to turn the pieces once or twice, but the flavor is great.
 
Here is a link to my website that details how I do chicken on the WSM. I've stopped checking the meat temp since I've done it so many times.
Be careful of flare-ups when crisping the skin directly over the coals.
