newbie stupid question

I have used the search an i have looked under the water pan option that chris put up ... and i just can't find the info i need. sorry to bother you all with this. i have done two cooks now on the wsm and it rocks. however, i have used water in the pan both times. i keep reading of the clay saucer option. are you all just sticking a clay saucer from a flower pot on top of a foiled water pan? do you foil the saucer too? do you clean it, or just let it stay fatty/dirty? thanks and sorry to ask this.
 
If you look down below at the "WSM Modifications" board, there are a few threads on the clay pot base mod. You may have to scroll back a few pages.

I think most people put the saucer inside the stock pan, and then foil the whole thing. Then they remove the foil and toss when it gets cool.

It would get really funky if you never cleaned it and didn't foil it. Funk is good when it comes to 70s era music, but with regards to your backyard smoker, funk is not your friend.
 
Never a stupid question here my friend. Foil the water pan then foil the clay saucer. Once both are foiled, foil both together. Once the cook is done and the WSM has cooled, remove the last foiling and toss. If the other two are fairly clean then I'll try to get a few more cooks out of them.
 
I do as David wrote, put the saucer in the water pan and then lay a single piece of HD Foil over the top. Once cool, remove piece of foil and your done. I used to foil both separately and then again after I placed them together, however, I didn't see much benefit in this method as a single piece of HD over the top will keep the "funk" out of water pan as long as it's wide enough to fold over the edges. No offense Toby. YMMV

None taken Larry. The one time I only HD foiled the saucer some crud leaked into the water pan and it baked on pretty good and was a pain to get off. So now to be safe I just foil them both.
 
Works great. Make sure to keep your bottom vents 100% open at start up then once you get to your desired temp, close them 80 -90% and keep your eye on the temp then adjust accordingly. It's easier to control the temp on the way up.
