I have used the search an i have looked under the water pan option that chris put up ... and i just can't find the info i need. sorry to bother you all with this. i have done two cooks now on the wsm and it rocks. however, i have used water in the pan both times. i keep reading of the clay saucer option. are you all just sticking a clay saucer from a flower pot on top of a foiled water pan? do you foil the saucer too? do you clean it, or just let it stay fatty/dirty? thanks and sorry to ask this.
