Hello everyone, I am about to buy a WSM. I will do some cooking and then have a pretty big party. I would like some feedback on how much meat you guys have loaded up in the WSM. I am assuming the best scenario is load it up with a number of boston butts. Interested in what you guys have to say on the subject.

Thanks!
Mike

Most I've done in a single cook on different occassions was - 6 pork butts, 8 full racks of spare ribs, 16 racks of loinbacks, 2-16lb packer briskets.

I would start off with a couple butts for your first cook and become familiar with your cooker before loading it up.

I just did 8 racks of back ribs for Memorial Day and I noticed the cook took about 1 1/2 to 2 hours longer than I thought it would compared to cooking a couple racks.

Give yourself extra time if you load it up, you can always foil and put your meat in a cooler if it finishes early. Nothing worse than hungry people waiting...

It also came up to temp much much slower with that much meat in it. Make sure you compensate at the start up for that.

Thanks for the quick responses! Great point Larry on the becoming familiar with the cooker. I plan to cook a few times before trying to load up. Just trying to be proactive and plan....

A butt cook will be ideal for this!

Definitely learn how to use the WSM before a hugh cookout! My maiden smoke was baby back ribs but I screwed it up. They weren`t bad but they were not tender. My second smoke was pork shoulder (pulled pork) and it was dee-lish. Much Success.
