newbie looking for something to smoke


 
Pork butt/shoulder bone in. Very forgiving cut. Shouldn't need 12 hours, 8-10 seems right to me so it's a full day. I buy them from Food City where I am in AZ, a markets that caters to the Hispanic population -- so they say. Very reasonable and a great chance of success with a fairly low cost cut of meat.

A great way to learn.
