Newbie help needed. BBQ 9 racks of spares

Have a 18" wsm. Probably gonna try 3_2_1 method.

Should I do 7 on wsm and 2 on my performer?

Or only use wsm...2 on bottom rack of wsm, four using rib rack on top rack with one laying on top?

Or will they all fit in my wsm? I'd like to use only wsm if at all possible..
 
Hi Phil, I've never tried more than six slabs on mine (rolled 3 on each level). The rack I have only holds 3 also (6 halfs), but you may be able to rack 3 and roll one or two on same grate. Only way to find out is try 'em on for size!
 
Between the rib rack and rolling/coiling the rest you should be able to fit them all on there for the first 3 hours at least. You might want to fire up the performer though for the 2 and the 1 though. Make sure you have enough fuel thats a lot of meat. I have done eight racks before all rolled/coiled 4 on each grate.

Maybe you could lean 2 halves on either side of the racks?

You have to bend the supports a little to get all the ribs on.

I think I'm going to try 4 rolled on each and make lots of sides

Regarding the fuel, I'm probably going to do a chimney of lit on top of a chimney unlit and take it from there..

since it is a lot of meat would I use more wood for smoke, or should 5-6 chunks suffice?
 
I did 7 a few weeks ago and I think if I had been creative I could have done 9. I did the 3-2-1 however I did use my gasser to finish them up. Here are a few pic's. Vince
