Hi All
I'm a newbie from the UK.
Some advice would be appreciated.
Been smokin' with my 18 inch weber bullet for a year now, and I want to cook a turkey and a beef rib for Christmas.
I see the temp for the rib should be more than 350 and the turkey less than 350 but will both take about 3 hours.
Can I cook them both together? Beef in the top rack turkey in the lower. Am I correct in assuming the top rack will be hotter so just keep the temp guage in the lid over 350?

Any help would be good
 
Temps will almost run even on the 18 WSM. The only thing I would be concerned about is beef dripping on the turkey or however you stack them. I would tent the one on the bottom rack with some foil.

Welcome Mike. I like to cook all poultry at 350*F so if your rib roast needs to be 350*F I think you'll have no problems. If there is a slight difference let one rest while the other is finishing up. It shouldn't be so much a difference -- they should still finish within resting time.
