I usually throw a party on January 1st to watch all the college football bowl games. So I decided to smoke a pork butt.
I started off with about a 7 pound pork butt seasoned up with a homemade rub several hours before putting it on the OTG.

Here it is going on the kettle around 12:30am with some apple and cherry chunks running between 235 and 250 degrees

Pulled it off after about 14 hours,my maverick read about 198 IT

I served it up with 3 different sauces, a mustard based sauce a North Carolina vinegar sauce and a doctored up #5 sauce. The guys favored the mustard sauce the girls liked the #5 sauce.
Sorry no plated pics I had hungry people to feed. this was only about my third time doing a butt,* but everybody seemed to like it very much.
