I was able to notch my WSM with my neighbor's dremel. If I can do it with my four thumbs, anyone can. Just wear eye/hand protection and go slow.
You need to make the notch just barely deep enough that the probe wires will be uncrimped while the lid is seated like normal. It will create a tiny air/smoke leak but no impact on performance. The hole is at the top of the smoker and the smoker is designed to leak out of the top anyway.
Just make sure your divot is in the right spot before turning it into a notch. I put my notch right above the grommet, which also happened to be next to the table where the base unit sits. Frankly, you could just cut a separate notch where you want and leave the divot as is.
