New WSM 22.5 - first smoker

Just picked up a WSM 22.5 to compliment my gas Weber Genesis Platinum (2005). Been a long time since I've used charcoal, and first time with a smoker - so I have a bit of a learning curve to work through (been reading lots on here). Going to give it my first shot this weekend. Need to cook up a bunch of chicken breasts (12-18) and cost of pork depending 2-3 racks of ribs as well so I am going to break in the smoker on that.

Looking forward to lots of experimenting this summer.
 
Welcome, congrats and enjoy your new smoker. I see you're from Texas, I thought gas grills were against the law down there and you could ONLY cook with charcoal :wsm:.

Don't sweat your first smoke, the nice thing about the WSM.....it's really kind of hard to screw it up. Chicken boobs and ribs are both simple and forgiving for your first run at it.

Yes, welcome Bart. Just keep doing what your doing by reading a lot on here. It will shorten the learning curve, a lot of good advice. And cook as much as you can

It wont be long and you'll be sharing tips with other folks......and sharing some pics of some fine BBQ
 
One thing that you need to know, and it's not mentioned to often here.
Whenever you fire up that smoker every neighbor in your area is going to stop by and see "What are you cooking this time?"
Other than that, the learning curve is small. I've found my 18" is a lot easier than any smoker I've ever used.

Cooked a whole pack of chicken breasts from CostCo for the family + some ribs (ribs finished after dark) on Saturday since lunch was right after church on Sunday. Everyone loved them.

Only problem was running low on fuel near the end and keeping temps up for the whole rib cook.
 
Nicely done Bart, the WSM has been known to run a little unsteady during the first couple of cooks, once it gets all "gunked" up it will settle in on a temp and not burn so much fuel. As for me I always over fuel, shut the vents down when the cook is over and reused whatever fuel remaining on my next cook. That chicken looks real good.
 
That's great looking chicken for a first attempt. After several attempts, my chicken is just starting to get as pretty as it is tasty...
