New toys

The freezer has 5 picanha's in it right now.
I will have a hard time spinning those when they come off the indirect like nobodies business.....
It cuts like a steak and is some of the best beef I can make.
Of course searing at about 122, it comes out wall to wall pink.
Looking at some rib roasts, looks hard to get centered enough to spin true.
No counterbalance came with my rotis.
If it is really out of balance a pair of vicegrips clamped on the shaft will help in a pinch. Watch Kijiji for a cheap used one that has the balance weight and use it on yours.

I have a counterbalance, but have only used it once, for a big turkey.

Rib roasts are easy to get "centered". As I stated in my earlier response, learn how to truss meat, and this is one of the reasons why.

Cut the roast off the bone(s) and truss it, so the roast is round and uniform in size. If it's boneless, simply truss the roast.

Thanks again, I will add that counter balance to my cart....I have an amazon order hanging in my cart just making sure I don't need anything else.
