New toy for my performer


 
This looks awesome! I recently sold my egg and have missed some of the features of that cooker. I might need to grab this.
 
It worked really well, maintained heat VERY well. I needed to start with a larger fire to get it preheated better. I wanted to start small and add if needed, easier than getting too hot and trying to cool off. A 2x snake with a block of 4 at the beginning was getting a consistent and steady 200°or so. After about 45 minutes I lit another 5 or 6, dumped them at the beginning and then held a real steady 275° for a few hours. Outside temp was about 40°f with a 10mph wind or so.

Once it was hot though, adding a few pieces of wood and a row of coal on top of the snake got it up to 475 in a short time. I shut the top vent and NEARLY closed the lower and it dropped to 350 after about 30 minutes. It really holds the heat and will take some trial and error to get it dialed in.

The only thing that was kind of a pain was lifting the grate off, then the heat deflector to add more fuel. With the performer it wasn't bad for me, mine has the metal table. Without it though you'd have to do some planning ahead or run without the deflector.
Overall I really liked it and am looking forward to using it more, hopefully with a brisket next. Seems really ideal for low and slow with some obvious possibility of high heat when you want it.PXL_20241123_191836946.jpg
 
Do you have enough room to put a disposable drip pan on top of the deflector?
I believe so, probably. It would be a shallow one, but doable. If you really wanted to you could use the real shallow "oven drip pan" disposable trays. That would certainly keep things clean

I just did a quick scan of that video posted upthread and he used what looked like a pie pan.
I have a similar looking deflector on my kamado and have enough room to use a disposable half pan.
Definitely use something for a brisket or butt.
 
Could one just cover the top of the heat deflector with some heavy duty aluminum foil (wrapping it down over the edges) rather than get a separate pan. or would there be concerns of drippings working under the foil?
