So I got an auber stoker for my WSM. I want to test it out tomorrow making some baby backs (2-2-1 method) and a beer can chicken (on top rack--or is that unsafe? Putting ribs on bottom rack with chicken on top?)
So my real question:
1) with a stoker is lump charcoal easier to maintain temp? I'm amazed at how much easier the briquettes are (less of a roller coaster, in my very limited experience)...
2) the stoker installs over one of the vent holes in the bottom. It covers one of the 3 holes. I see a picture on the install instructions showing a WSM with a silver tape over the other two holes. Any chance that's duct tape? Or some kind of special high-heat tape? Wondering how folks solve for this...thanks in advance for any advice/experience with this
