New toy for my 18.5" WSM :)

So I got an auber stoker for my WSM. I want to test it out tomorrow making some baby backs (2-2-1 method) and a beer can chicken (on top rack--or is that unsafe? Putting ribs on bottom rack with chicken on top?)

So my real question:
1) with a stoker is lump charcoal easier to maintain temp? I'm amazed at how much easier the briquettes are (less of a roller coaster, in my very limited experience)...

2) the stoker installs over one of the vent holes in the bottom. It covers one of the 3 holes. I see a picture on the install instructions showing a WSM with a silver tape over the other two holes. Any chance that's duct tape? Or some kind of special high-heat tape? Wondering how folks solve for this...thanks in advance for any advice/experience with this :)
 
Its likely aluminum tape, and is almost certainly not duct tape. The instructions don't have words? I would think they would specify?

And yeah, generally not the best idea to let poultry drip on your other meats.

So if you wanted to smoke chicken and ribs, is it better to start the rib first, do the 2-2 part, then put the chicken on the lower rack (guessing it'd have to be spatchcocked?) during the 1 portion and raise the heat? Kinda hijacking my own thread here :)
 
Don't worry about chicken on top Kris (other than from a timing point of view). Certainly not from a "contamination" point of view.

It's all cooked (eventually) so it doesn't matter in the least.

As long as the chicken is cooked till safe temps before removing the ribs, than no problem.
only issue is if you don't mind flavoring your ribs with chicken drippings.:wsm:
