I watched that video last night. I was more impressed when I saw the picture than after I watched the video. Maybe Tom didn't give it full justice, but it didn't do much for me. I don't think it is a good idea to use it with the high spot in the middle. Tom showed the charcoal layed up against the the walls of the kettle. From what I have seen that's a great way to start cracking your porcelain and eventually have burn-through. The Weber baskets or a Slow-N-Sear keep that from happening.
